With its membrane positioned centrally, the whole cylindrical surface of a Della Toffola press is available for the screen which effectively doubles the screen surface area, enabling quicker separation and greater clean free-run juice. This results in quicker expression of the remaining juice, under more gentle pressure from the inflating membrane and with less cake-breaking phases. There is less damage to the skins during pressing, with lower polyphenol levels and fewer solids in suspension, resulting in better retention of flavor, less browning and quicker cold settling. A further benefit is the shorter press cycle time, increasing productivity especially during the peak harvest period.
